THE AZERBAIJANIS’ RITUAL AND HOLIDAY FOOD IN THE BEGINNINGS OF THE XIX – XX CENTURIES

Abstract

In the present article there has been given Azerbaijan people’s ritual and holiday food’s complete ethnographical character and classification. In explored period the noticed holidays in the life of our people have been given as national (season), religions and harvesting holidays and belonging to these holidays the Azerbaijanis cuisine culture differs with its ingredients, size, richness and preparations. There has been also spoken widely about the wedding ceremany’s and funeral rites’ food on the base of ethnagraphical material. There is especially noticed that the Azerbaijanies’ ritual and holiday food has been created for ages depending on people’s empirical knowledge, practice, taste and economy.
