    Abstract

Azerbaijani cuisine is very rich in food types. Located at the crossroads of East and West, Europe and Asia, Azerbaijan has rich culinary traditions that have been formed over the centuries. Although our famous dishes such as pilaf, dolma and kebab are known all over the world, many of our rare and almost forgotten or forgotten dishes are slowly disappearing. Such forgotten dishes cover most regions of Azerbaijan and arouse interest. Azerbaijani culinary traditions are a living bridge with our past, as they keep holidays and regional identity alive. Preserving and re-presenting these rare dishes is of particular importance in terms of preserving and promoting the cultural heritage of Azerbaijan. This article presents the names of some of these rare culinary gems found in the Baku, Absheron and Western Azerbaijan regions of Azerbaijan and their preparation methods.
